A short walk from Hua Hin beach and the railway station, the Hua Hin night market comes alive at 6.30pm and spans two blocks consisting of tightly packed stalls and restaurants. The furthest end of the market boasts a few large restaurants that offer a combination of fresh seafood and Western fare. If you’re looking for something lighter, try some of the small snack stalls. There are many to choose from, but our favorites include the mussel omelets, roti (Thai style crepe), and the baby back ribs. The mussel omelet is fried up with coconut milk to lighten it up, while the roti can be ordered with a variety of fillings and toppings. Situated in the middle of the market, look out for a small stall that sells baby back ribs that are smoked in a large clay pot behind the stall. The meat easily pulls away from the bones and could possibly be the best ribs in Thailand.
